Korean cucumber or Japanese cucumber is the best source in making the Korean side dish, Oi Muchim (Spicy Cucumber Salad).
It is an excellent side dish to complement to rice, ramen or eat by itself.
The ingredients use to prepare this side dish are mainly cucumber, salt, Korean chilli flakes, garlic, light soy sauce, sesame oil and sesame seeds. If you prefer non-spicy, I would suggest to stir-fry the cucumber rather.
